Responses to climate change

Analysis by NASA scientists shows that the average global temperature has increased by just over 1°C since 1880. More than half the warming has happened since 1975. Governments and scientists from across the world are becoming increasingly worried about the impact of climate change as the Earth warms. Some countries are already experiencing wildfires, food shortages and extreme weather events. Countries are now being urged to reduce their use of fossil fuels and produce more clean energy from renewable sources such as:

    •   solar cells

    •   solar heating

    •   waves

    •   tides

    •   hydroelectric power

    •   geothermal energy

The Gen Zers leading a new pro-union push

In August 2022, Gallup recorded the highest levels of union support since the 1960s; 71% of Americans approve of labour unions, and about one in 10 non-union workers said they were "extremely interested" in joining one.

Gen Z is, according to the Center for American Progress, "the most pro-union generation alive today". Gen Z's involvement and support for organised labour makes sense considering the context of their experiences, says Kate Bronfenbrenner, director of labour education research and a senior lecturer at Cornell University's School of Industrial and Labour Relations, US.

"First of all, they grew up being told they were going to be better off than their parents," she says. "The fact is, they struggled to find jobs, and the jobs they found were not as good as their parents'. They and the generations that follow them are saddled with college debt. They're concerned about broader social issues like reproductive rights and gun control, and planning to hold governments and employers accountable on those issues."

"I think there's a growing understanding that if you have a job, you need a union," says Jaz Brisack. The now-26-year-old was one of the earliest leaders of union efforts at Starbucks in Buffalo, New York, in 2021. Brisack now believes in the power of unions to create equality among what they see as an inequitable power structure, saying, "I think people are looking back and seeing that what actually created improved standards of living in the past was union density, and they're more open to ideas about organising."

Healthier rice pudding

Properly creamy, sink-your-spoon-in rice pudding is a wondrous thing. We've gone heavy on the comfort here, but eased up on the calorie and fat count.

Ingredients

-100g pudding rice
-750ml semi-skimmed milk
-1 tsp vanilla bean paste
-2-3 tbsp clear honey to taste
-4 tbsp full-fat Greek yogurt to serve

Method

Put the pudding rice, milk and vanilla paste in a large saucepan and bring to a gentle simmer over a very low heat, stirring so it doesn't stick to the base of the pan.

Simmer for 50 minutes, stirring occasionally at the beginning and more often as the rice swells, until it's tender and the consistency is creamy. Stir in 1 tbsp of the honey.

Divide among 4 bowls, top each with a tablespoonful of yogurt and a drizzle of honey to taste, then swirl through and serve.

Delicious tips

Rice pudding is notoriously calorific, but simple to make healthier. We've swapped the classic cream and full-fat milk combination for semi-skimmed milk, adding just enough Greek yogurt at the end to give that essential creamy texture.
